Rigatoni with grilled Sausage and Veggies

I wrote this post on Friday, April 20th, right before Kelli went into labor. She had a few contractions earlier in the evening, but we weren’t sure if things would really start. This ended up being our last meal as just the two of us. Unless you count all those strawberry jell-o cups and ice chips as a meal.

It’s the third night past our due date. We are slowly becoming stir crazy. I’ve been having a hard time concentrating at work. I had been thinking about dinner and wasn’t coming up with anything. It sounded like Kelli was in the mood for Italian, so I decided to try and replicate one of my favorite pasta dishes served at Biaggi’s. It is very simple, but enjoyable.

Here is the very basic recipe:

  1. Italian sausage
  2. Green peppers
  3. Yellow onion
  4. Marinara sauce
    1. 1/4 cup olive oil
    2. 5 cloves of garlic, peeled and smashed
    3. 35oz can Italian tomatoes with basil. Go for the “expensive” ones that don’t contain citric acid.
    4. A small amount of oregano and basil (I don’t have any fresh right now.)
    5. sea salt and fresh pepper
  5. Whole wheat rigatoni
  6. Block of fresh parmesan cheese. Goat cheese would be better, but I keep this on hand.

The process is so simple.

  1. Crush all the tomatoes with your hand.
  2. Saute the garlic for a few seconds in the olive oil.
  3. Add the rest of the sauce ingredients and simmer.
  4. Grill the veggies and sausage and then cut into manageable pieces.
  5. Boil the pasta.
  6. Combine and add the cheese.

I grill veggies in a fish basket. It barely fits on my grill, but gets the job done.

    Okay, I just read your post about how your “hobbies” posts won’t make it on the main page, and I have to object here. This post is TOTALLY baby-related. Your last meal together just the two of you. Plus, you have cool pictures. So, my two cents are that this totally belong on your family blog page! imho :)

    I think we inherited that grill basked from Scott & Miracle when they lived with us… it is pretty nice. I do think of them every time I use it. I also wonder if I should put it in a box and mail it to them… hmm…
